2 cups grated carrots
1 cup chopped roasted peanuts
1 tbsp. grated onion
½ tsp. salt
½ cup VEGANAISE
Lettuce or chicory
1 tomato cut into thin wedges
Combine carrots, peanuts, onion, salt and Veganaise. Mix lightly and serve on crisp lettuce. Garnish with tomato wedges.
