Ingredients:

2 cups amaranth flour

½ cup arrowroot flour

¼ tsp. Stevioside

1 tsp. cream of tarter

2 tsp. baking soda

½ tsp. ground cloves

½ cup chopped walnuts

¾ cup mashed ripe bananas (about 2)

¼ cup canola oil

How to Prepare:

Preheat oven to 350, oil and flour a 9” by 5” loaf pan.

Combine amaranth flour, arrowroot flour, stevioside, cream of tartar, baking soda, and spices until well blended.

Add walnuts to flour mixture.

In a separate bowl, combine mashed bananas and oil. Beat until smooth.

Working quickly, add the mashed banana mixture to the dry ingredients. Stir until wet. Do not over mix or the trapped air bubbles will escape. The batter will be stiff.

Spread the batter into the prepared loaf pan.

Bake at 350 for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.

Remove and allow to slightly cool in pan.

Remove from the pan serve warm or allow to cool completely.
