1 cup brown rice flour
1 cup quick or baby oats
A pinch of sea salt
2 tsps. Cinnamon
1 cup chopped dried bananas
1 cup chopped peanuts
2 tsp. lemon rind
1 cup orange or apple juice
4 tbsp. peanut butter
¼ cup grapeseed oil
¼ cup sweetener (sucanat, maple syrup, fruit juice concentrate)
Combine first 8 ingredients. Heat the next 4 ingredients and stir until creamy. Cool and stir into dry mixture. Preheat oven, drop cookies onto oiled sheet and bake at 350 degrees for 15-20 minutes or until browned. Cool on wire rack.
