For Starters: The easiest and tastiest frozen treats are frozen fruits, like grapes, berries, peeled oranges, peeled bananas, sliced peaches, sliced mangoes, or any of your other favorites. The best way to freeze these treats are in plastic baggies or on non-stick cookie sheets. If non-stick cookie sheets are not available you can use waxed paper.
Frozen Fruit Treat
1 3/4 c Strawberries
1 lg Can crushed pineapple
5 Bananas (cut in cubes)
12 oz Frozen orange juice concentrate
1 1/2 c Water
Mix ingredients together. Freeze in small paper cups. Serve partially defrosted.
Chocolate Covered Frozen Bananas
Cut bananas in 1/2 and insert popsicle sticks into the halves.
Melt vegan chocolate chips (Sunspire or Tropical Source are good) on a ceramic plate in the microwave for a few seconds. Stir. Keep microwaving the chips until they are melted. Don`t overcook!
Roll the banana halves in the chocolate and then roll them in chopped walnuts or pecans.
Place on a freezersafe plastic lid and put in freezer until frozen.
Soy Dream Cake
2 quarts Soy Frozen “ice cream” if flavor(s) of your choice (Soy Delicious is great!)
1 bag or 2 boxes Barbara`s Vegan Chocolate Animal Cookies (crushed)
1 jar vegan chocolate sauce (optional)
1 cup chopped nuts (optional)
1 tub Hip Whip (non-dairy whipped topping)
Sprinkle crushed cookies over the bottom of a springform pan. Slice the first flavor of “ice cream” into rounds, about 3″ thick. Place over the cookie crumbs and fill in any holes. Sprinkle cookies or top with nuts and sauce, if desired. Layer the next “ice cream” on top. Spread Hip Whip over the top. Freeze until hard.
To serve; open springform pan and cut. (Let sit for a few minutes if too hard. Placing the knife in hot water helps too.)
