2 zucchinis, diced
1 large red pepper, diced
2-3 cloves garlic, minced
1 large can of organic diced tomatoes
1 medium eggplant, diced
1 large onion, diced
½ tbsp. olive oil
Sauté the onions and garlic in a saucepan until soft. Add the other vegetables and cook over medium heat for 30 minutes or until vegetables are soft, but not mushy. Serve with pasta and/or fresh bread.
